The Culinary Experience: March 2010

Monday, March 15
Chef Kirk BachmannChef Bachmann, a fourth generation chef, began his career at a very young age in the pastry kitchen of his father, a master pastry chef, trained in Germany. As a young teen, he spent much time training at a resort in Northern Germany owned and operated by his uncle, also a classically trained chef. After graduating from the University of Oregon, with an honors degree in International Studies, Chef Bachmann went on to receive his formal culinary training at the Western Culinary Institute in Portland, Oregon. Later, Bachmann earned his Masters in Education from American InterContinental University. After a culinary career that began more than 20 years earlier, Chef Bachmann returned to the Western Culinary Institute in 1995 as a Chef Instructor. He has cooked for Heads of State and celebrities and holds many associations and honors.
Today, he holds the title of Vice President of Education/Academic Affairs and is the Corporate Chef for Le Cordon Bleu Schools North America. He continues to ensure the highest level of professionalism at Le Cordon Bleu Programs throughout the United States. He has also been very instrumental in the implementation of Le Cordon Bleu Patisserie and Baking Program as well as Le Cordon Bleu Hospitality & Restaurant Management Program.

Cooking Session with Guest Chef: Beth PavAfter a career in the world of television production, Beth decided to take her producing talents in another direction by developing Cooking by Design Culinary Studio; a Cooking School and Catering business designed to work one on one with clients, meeting their needs through expert culinary instruction and the creation of fabulous food.
Beth has taught at acclaimed cooking schools nationwide. She was the first featured chef in Central Market’s, “Women Chefs in Austin” series and has been featured and/or quoted in “The Dallas Morning News,” “New Texas Magazine” and austincitysearch.com. Her food articles and recipes have been published in the “IACP Cooking Schools/Teachers Membership Section Newsletter,” “The Austin Chronicle,” and on the web. Beth has been a featured guest chef on Austin’s Fox7 morning news program. She is a member of the International Association of Culinary Professionals, Women Chefs and Restaurateurs, and is a charter member of Les Dames d’ Escoffier – Austin.
Beth has worked both as a chef and line cook in restaurants on both the East and West coasts including Zuki Moon Noodles in Washington D.C. and Jeffrey’s Restaurant and Bar in Austin. Beth was formally trained at L ‘Academie de Cuisine in Bethesda, Maryland and has continued her education through coursework at the Culinary Institute of America and Tante Marie’s in Northern California.

Cooking Session with Special Guest Chef Dorothy HuangAs Houston's renowned Chinese cooking teacher, Dorothy Huang has taught thousands of people to embrace Chinese cooking in their own homes. Her first cookbook, Dorothy Huang's Chinese Cooking, features simple instructions and delicious results that have engendered huge appeal and acceptance locally and nationally. This revised and expanded version, Chinese Cuisine Made Simple, includes even more mouth-watering recipes and beautiful color photographs.
Dorothy Huang's Dim Sum Lunch and Walking Tour of Chinatown in Houston, Texas, has been featured in regional and national publications. A perpetual favorite among Houstonians, the class frequently has a lengthy waiting list and drawn noted chefs as students. Huang has appeared on many television and radio shows. Highly respected as a Chinese food consultant, Huang has developed recipes for major cookware and food companies. She is a member of the Houston Culinary Guild and the International Association of Culinary Professionals.

Cooking Sessions with Special Guest Chef from the Food Network: Sara MoultonSara worked for two years as an instructor at Peter Kump’s New York Cooking School (renamed the Institute of Culinary Education), where she discovered her love of teaching, a passion that would give focus to her subsequent work in television.
Sara Moulton is one of the most trusted names in the food biz. As the host of “Cooking Live,” “Cooking Live Primetime,” and “Sara’s Secrets” between 1996 and 2005, she was a founding Food Network personality. She’s been Food Editor of ABC-TV’s “Good Morning America” since 1997. In the spring of 2008, she hosted “Sara’s Weeknight Meals” for public television. Sara was Gourmet’s executive chef from 1987 until the magazine was shuttered in October of 2009. She is the author of Sara's Secrets for Weeknight Meals and Sara Moulton Cooks at Home. Her next cookbook, Sara’s Everyday Family Dinners, will be published by Simon & Schuster in the spring of 2010.

Special Guest Chef: Susan Spicer
In 1979, Spicer began an apprenticeship with a French chef in New Orleans, and then ventured to Paris, and throughout California and Europe before returning to work in another New Orleans kitchen. She helped open Bistro Maison de Ville in 1986, and cooked there for four years before leaving to join a partnership to open Bayona, a restaurant in the French Quarter. National attention quickly ensued, and Bayona was featured in notable publications such as the New York Times, Bon Appetit, Travel & Leisure, Gormet and Food & Wine.Chef Spicer’s next venture was Spice, Inc., a gourmet market with cooking classes and an artisan bakery, which evolved into Wild Flour Breads, co-owned with another partner. In 2000, Spicer and three partners opened Herbsaint, a casual, modern bistro in New Orleans, known for being a local hot spot for dining and socializing.
She has received many accolades, appeared in publications and on television, and has done a great deal of charity work for New Orleans. Her first cookbook, Crescent City Cooking: Unforgettable Recipes from Susan Spicer’s New Orleans, was released in 2007.

Special Guest Chef: Barbara Fenzl
Barbara Pool Fenzl, C. C. P. (Certified Culinary Professional), is a major figure on the American culinary stage: owner of Les Gourmettes Cooking School in Phoenix, established in 1983; television host of the 13-week PBS series, “Savor the Southwest,” and host of KAET-TV’s last ten cooking-related pledge drives (“A is for Appetizers,” “D is for Desserts,” and so on) and a regular guest on “Your Life A to Z,” a local morning television show; author of Southwest the Beautiful Cookbook, Savor the Southwest, and Seasonal Southwest Cooking; renowned cooking teacher in both the United States and the Périgord region of France; former food editor of Southwest Passages and Phoenix Home and Garden magazines; a frequent contributor to Bon Appétit magazine and other national publications; past president of the International Association of Culinary Professionals; benefactor and past board member of the American Institute of Wine and Food; past president of the Arizona Chapter of Les Dames d’Escoffier; and a past member of the James Beard Foundation Restaurant Awards Committee.An inductee in the Arizona Culinary Hall of Fame and recipient of the Greater Phoenix Chef’s Association Humanitarian of the Year, Ms. Fenzl has the distinction of having the Junior League of Phoenix’s kitchen named after her and has been the honorary chairman of numerous fundraising events. She received the Girl Scouts World of the Arts Award in 2002 and was named a 2003 Master of the Southwest by Phoenix Home and Garden Magazine. She holds B.S. and M.A. degrees and has studied cooking at the Cordon Bleu (London), Ecole LeNotre, and Luberon College.

Special Guest Chef: Andrea BeamanAndrea Beaman is a natural foods chef, spokesperson, author (The Whole Truth – How I Naturally Reclaimed My Health, and You Can Too!, The Eating and Recipe Guide – Better Food, Better Health and Health is Wealth – In Tough Financial Times The Best Investment is in Yourself), and television host dedicated to spreading knowledge about alternative healing and green and sustainable living. Andrea was a featured contestant on Bravo’s hit reality TV show, Top Chef (seasons 1 and 5). She is the food and health expert on CBS News, and has appeared on Barbara Walters, The View. She is the host of Wise UP! a health and wellness show that travels across the country in search of life-enhancing activities, alternative therapies, holistic health and organic foods. And, she is the host of the Award Nominated Fed UP! an organic whole foods cooking show that teaches people how to cook for, and cure, their bodily ailments.
Andrea is featured in the Top Chef Cookbook, Escape From Corporate America, and the Integrative Nutrition Case Histories books. She has contributed articles to Women’s Health Magazine, Forbes Traveler, Dish Du Jour, Physician Assistant Magazine, Quick & Simple, Delicious Magazine, Nick Jr. Magazine, Energy Times, Delicious Living, and many others.

Special Guest Chef from New York City: Grace YoungGrace Young is the author of Stir-Frying to the Sky’s Edge to be published May 2010. Young’s cookbooks, including The Breath of a Wok, have won numerous awards. Young's first book, The Wisdom of the Chinese Kitchen, won the IACP International Cookbook Award. It was an IACP Julia Child First Cookbook Finalist and a James Beard International Cookbook Finalist.
Young has been featured in The New York Times, All Things Considered, and on CBS Sunday Morning. She is a consulting editor for Saveur magazine and her work has appeared in Saveur, Bon Appétit, and Food & Wine. She has lectured at the San Francisco Asian Art Museum, Radcliffe Institute for Advanced Study, New York University, Culinary Institute of America Greystone, and the French Culinary Institute in New York City. For 17 years, Young was the Test Kitchen Director and Director of Food Photography for over forty cookbooks published by Time-Life Books before launching her career as an author.
