    In the midsat of a busy life, it can seem the treadmill never stops. Joy can seem to elude us. We find ourselves longing for the simple experience of joy. In this session, Susan Sager shares some specific strategies for expanding your capacity for joy.

But what if there were another, deeper motivation at work ?   According to Susan Hawkins Sager, most spa-goers are unconsciously seeking a retreat ... a pilgrimage into at deeper part of themselves.     Singer and actress Hillary Hight Daw has performed in opera, theater, commercials, television and film.  She was Professor of Voice at Kennesaw State University in Atlanta for over fifteen years and currently makes her home in California and is a full time music faculty member at San Francisco State University. Her recent appearances range from the soprano soloist in Beethoven's Ninth Symphony to an appearance on the hit television show Law and Order, SVU.  Her solo CD, Americans in Paris, is available nationally. Having found her self when she found her voice, Hillary now specializes in helping others do the same.

Formerly the Fitness Director of the prestigious Peninsula Spa in New York City, Anne has delivered lectures on health, wellness and empowerment in health spas and corporations across the country. A passionate and inspiring speaker, she is totally dedicated to enhancing individuals' physical and emotional well-being. A sincere and humble student of yoga, she knows there is always more to learn. Anne is currently pursuing graduate studies in Somatic Psychology.

    Special Guest Chef from Bravo television network's Top Chef: Tre Wilcox

    Formerly chef de cuisine of Dallas' award-winning five-star restaurant, Abacus, Tre Wilcox began his culinary career at the age of 17 where he worked at several fast food restaurants that enabled him to land a position at Eatzi's, formerly a Brinker International concept. Fluent in both English and Spanish, Tre worked his way up to a corporate trainer position and was sent all over the country to assist in opening five new stores. This opportunity allowed him to participate in Brinker's rigorous training, including organization, knife skills and management.

    Determined to fully explore the culinary world, Tre's career goals led him to his first foray into fine dining at David Holben's Toscana restaurant. It was during this experience that Tre's interest quickly turned into passion and he found his way to "one of the best restaurants in 1999," Abacus. Although beginning his career at Abacus as grill cook, Tre quickly moved up to sous chef, executive sous chef in 2003 and most recently was promoted to chef de cuisine where he continues to refine his skills by creating unique and exciting dishes.

    In 2003, Tre worked with wine manager, Matthew Scott, to develop the menu for Dallas' KRLD Restaurant Week where he received the "Best Food and Wine Pairings" distinction. This recognition won him a scholarship for continuing his education at the Culinary Institute of America in Greystone, California. Later that year, Tre was runner up in D Magazine's Best of Dallas 2003 as "Best Breakout Chef." In 2004, Tre won first place in the Dallas Morning News' Rising Star Chef contest for his Grilled Lamb Loin with Portobello Mushroom Risotto dish paired with Terrazas de Los Andes Reserva Malbec 2002.

    Tre's dedication, enthusiasm and passion have made him a renowned and impressive chef. He's been nominated as the James Beard Foundation's Rising Star Chef for two consecutive years. To be nominated for this award, sponsored by Gallo of Sonoma, you must be "age thirty or younger and display an impressive talent and be likely to make a significant industry impact in years to come". D Magazine has also named him one of the "Top Young Guns" in Dallas. He has appeared on a number of local TV shows, including the Texas Cable News Network, ABC's Good Morning Texas and Metro and FOX's Good Day Dallas.

    Special Guest Chef: Paula Lambert

    In 1982 Paula Lambert founded the Mozzarella Company, a small cheese factory in Dallas. Her goal was to make cheeses like those she loved when she lived in Italy, and she has succeeded.  Today her hand-crafted, award-winning artesinal cheeses are sold throughout the United States to restaurants, hotels and gourmet shops, as well as to cheese lovers at her factory shop in the Deep Ellum section of Dallas. Consequently, Paula is recognized as one of America's most celebrated artesinal cheese makers.

    Over the years the cheeses have become famous. They have been featured time after time in publications such as Gourmet, Food & Wine, Bon Appetit and The New York Times. They have also been served at the Academy Awards and to presidents and royalty, and have won many awards from such prestigious organizations as the American Cheese Society, the American Dairy Goat Association, and the National Association for Specialty Food Trade.   

    Paula teaches cooking classes throughout the US and in France.  She frequently appears on both local television and radio.  She and the Mozzarella Company have also appeared on many nationally-broadcast television programs including Food Finds, Unwrapped, Cooking with Sara Moulton, Mario Batali's Ciao America on TVFN and Stephan Pyles' Cuisine of the Southwest on PBS. 

    Paula's cookbook, The Cheese Lovers Cookbook and Guide, was published in November of 2000 and was nominated as a Finalist for the World Cookbook Awards in Cork, Ireland. Her second cookbook, Cheese Glorious Cheese, debuted in 2007.

    Tiffany Collins is a nationally recognized culinary professional and currently serves as Culinary Spokesperson for the Texas Beef Council. 

    Tiffany served as a Foods and Entertaining Specialist with the Southern Living Cooking School. In this role, she traveled to more than 40 cities every year, delighting large audiences with her cooking demonstrations, menu planning and entertaining ideas. 

    She will feature recipes from her new cookbook, 200 Best Panini Recipes, now available online and in stores.
